ARIZONA: Pine Nut Foraging

    Found sporadically in the northern half and eastern portion of Arizona, also found in adjoining Utah, New Mexico, and Colorado. The PiƱon Nut is easy to harvest and can be eaten raw, out of shell. Pine nuts are found growing in small cones. Seeds can be harvested from very late summer to mid fall. Seeds can be found in cones and dropped on the ground. Don’t harvest out of season; too early may mean you won’t find much, too late may mean the seeds have lost their moisture, oil and nutrituion properties. I have picked these and eaten them straight form the shell. Because this is a soft nut, you should deshell the nuts and refrigerate, so they keep longer.
