Broiler meals

    A few years ago, John came across the idea of broiler meals from some old cookbook of his. They are cool– an entire meal using both the broiler pan, and the rack (the good stuff on top drips down to what’s in the pan.) Ummumm good. And fun.

    Broiler Meal of Franks, Beans, and Fruit

    Serves 4-6

    Preheat broiler. Prepare broiler pan and rack, and broil as directed.

    5 C canned baked or chili beans (your favorite flavor and variety)
    8 good franks (brats, metts, whatever)
    ΒΌ lb sharp cheese slices, cut into strips
    8 slices bacon
    8 slightly green bananas
    4 apples
    Melted butter
    4 tsp sugar

    Line broiler pan with foil and spread beans in pan. Split franks almost through lengthwise and insert cheese strip strips. Wrap frank and cheese in bacon slice, fastening ends with toothpicks. Place on broiler rack cheese side down. Peel bananas, cut in half crosswise, and lay on broiler rack. Core apples and cut into slices, placing slices on broiler rack. Brush banana halves and apple slices with melted butter and sprinkle apple slices with half the sugar. Broil 4 inches from broiler for 5-7 minutes. Turn franks and fruit. Brush fruit with melted butter and sprinkle apple slices with remaining sugar. Broil 5 minutes longer.
