Dehydrating 101

    The excess water from rehydrating the veggies is good to use as the start for soup to make the most of any nutrients lost, or use as the liquid for making the bread dough.
    Dried tomato slices are excellent snack items. Better than chips.
    I usually parboil the whole potatoes until mostly done, but still firm, then grate and dry.
