Easy Chicken with Herb and Butter Rice

    This meal is a big hit with the picky eater (wife) in my family.

    You will need:
    4 Chicken Thighs or two breasts
    2 pkgs Rice a Roni Herb and Butter
    A large covered frying pan–I use a 12″ model


    I start with 4 chicken thighs, skin them and boil them until they are mostly cooked–though I sometimes just use a jar of my home canned chicken thighs.
    When the thighs are done I de-bone and cut them into small pieces.
    I reserve enough of the broth to make the packages of Herb and Butter Rice per directions on the package.
    The final 15 minutes I add in the chicken as well as the seasoning packets, stir, cover and simmer

    It takes about 45 minutes to prepare.

    Serves 6 hungry people. There are only 3 in my household but I make a double batch because the leftovers are yummy.
