Jerky – When To Add The Salt

    I have read two different conflicting ideas concerning ground jerky.

    The first, you are supposed to add the salt just before dehydrating. This is the way I have always done it.

    Second, I have read people say that it is ok to let the meat marinade overnight with salt and spices.

    What are your thoughts?
