Knox Gelatin substitute for eggs

    I just found out that you can use Knox Gelatin as a substitute for eggs in recipies for canning and wondered in any brand of gelatin would work – could not find Knox but did find a Hy-Top brand that I bought. Checked the web and have 2 recipies that each states different amounts of water per packet of gelatin to equal 1 egg – one calls for only 2 tablespoons of water, the other recipie calls for 2 tablespoons of water plus 1 teaspoon warm water, unsure what recipe I should use. Anyone know the answers to these questions?? Thanks, Darlene
