Pressure Canner safety

    Just one thing I learned at the beginning of last year. NEVER, EVER walk off and leave your canner unattended. Last year, I got a load of green beans going, and the Dog wanted out. So I took him out, and got sidetracked a little. Just as I walked in the door, I heard a boom, and steam escaping. I had blown the safety valve out of the canner, and steam cleaned the ceiling above the stove. I found the valves online, and ordered three of them, just in case.
