Thimble Berries smell fermented

    I canned up some Thimble Berries that I foraged a few years ago in a light sugar (splenda) syrup. Opened one up & although it doesn’t have any mold it does have a faint fermented (wine) scent.
    I’d like to use this in a custard pie layered between a lemon grass & ginger whole wheat cookie crust & vanilla custard filling.

    Crust is in the stove top oven baking as I type. Wood stove is load up with junk wood so it will be a while before it’s done. On to grinding rye berries, I have a craving for bread.
