Postby idahobeef » Sat Dec 24, 2016 7:11 am

Not good.lol I wouldn't buy anything like that unless I knew who's kitchen it came from! For that price, you could pick your own and can up a bunch the RIGHT way... " I got food poisoning and I only paid 10 bucks for it". :)

That's a lot of sugar! I certainly wouldn't buy something like that if I didn't know who it came from! (ie: very close friends)

At least the seller is upfront that it wasn't processed. However I wouldn't buy it. Ever. As Stahlrosen suggests, you really need to know the person and their skills. NO prices is worth the risk.

Sadly we have little choice in off-the-shelf commercial stuff. A few options but not many.

Leave it sit long enough and you would have some serious hooch.

If the jars do not explode first.

Ask me how I know this.

My Dear Wife SWMBO (She Who Must Be Obeyed) does something very similar with strawberries.
Fresh crushed berries, sugar (about 1/3 of what the seller used) & pectin
Pack in sterile 1/2 pint jars, lid them and freeze
Strawberry Freezer Jam is fantastic. I believe razleberries would be equally good
They keep well frozen for a couple of years
They have this thing half right anyway

I doubt anyone is going to get food poisoning unless the berries are picked with dirty hands, or not rinsed properly. Same risk one runs at the supermarket or farmer's market. High sugar content and refrigeration will inhibit the eventual fermentation. It's possible they had it frozen prior to sale and are using the sale to clear freezer space.

$10 a quart is a crime though. lol.

The process for freezer jam works and is safe when done properly, but I would have to know the person doing it! Whether it is legal or not, may depend on where you live. They recently made it illegal to SELL fresh milk, so now my friend gives it to me and I give him portraits of dead presidents! I like fresh dairy products and I guess he is an art lover? Works for me. Swamp
