I notice that nobody mentioned freezing them...they keep nicely in the freezer, whole, until the weather cools off or you have more time to handle them. You can hold the frozen tomato under hot running water, then rub off the skin. Toss the frozen orb in a dish, and when it melts a bit, chop and either use in cooking or can it. Yes, they do get mushy when frozen, but they get that way when you can them too (NOTHING has the texture of fresh ones) so what the heck. If you have confidence in your back ups to keep the freezer going, they can stay in there until needed for cooking...
Personally I like canned better (Im used to it) but this give you another option to try

I don't know how many times I have stated that I don't can. I graduated from college and my cousin gave me a graduation gift of a All American pressure cooker, new water bath pot and all the accessories. I vacuum pack a lot so already had the jars. Here is my very first batch of canned stewed tomatoes, all four pinged.

Nice, another good way to do tomatoes if you've made enough plain canned tomatoes is to make pasta sauce, salsa, tomato paste or ketchup, there are a lot of options for tomatoes out there.

I do want to try ketchup. I recently bought ketchup in a bottle and the flavor was different, well so much so that now that is all I buy. I want to try and make some.

And at the end of the season before the first frost if you still have green tomatoes on the vine... pick them and make Green Tomato Jelly with your favorite flavor of Jello :)

Green jello sounds good, maybe I will see if he has any at the end of the season.
