Adding Salt to Jars

    I have a quick question, I have noticed that some recipes especially when canning meat, say that its optional to add a teaspoon of salt to the jars before adding the meat. My question is what is the salt for? Is the taste different if you do not add salt. I have done canned meat before and I did not add salt. Just wondering what ( if any) difference it would make.
