What’s THIS???

    I just opened a home-canned jar of chicken (w/salt) processed August of last year (2015). The meat and juice looks fine, but the lid has black splotches on the inside. The seal was tight.

    I washed it with detergent and a sponge to see if it would come off, or if it was something embedded in the metal of the lid. First, it smeared, then the smear washed off, but there was still a black stain on the lid.

    My instinct is to toss it. I opened another jar from the same batch, and it looked totally normal.

    Any thoughts?
